It cuts your prep time by more than half and it can taste just as good, or to some people even better than a cake you make from scratch...yes, BETTER! Don't get me wrong, I LOVE making desserts from scratch, but who doesn't need a quick recipe or two in their bag of tricks?!!
Cake mix is the perfect base for a delicious cake. The possibilities are endless!
Remember to never go by the instructions on the box...this is how it tastes like it's made from the box. You need to get creative!
The most valuable tip I can give you when it comes to using cake mix is to always replace water with whole milk, and vegetable oil with unsalted butter. These 2 minor changes alone will make your boxed cake taste not so "boxed.".
Below I'm sharing 2 of my favorite easy cake recipes with add-ins/substitutes that will bring your cake mix batter to the next level! When you use these recipes, no one will ever know you didn't spend hours slaving away in the kitchen - you're happy and they're happy...it's a win-win!
Easy Vanilla Cake
Ingredients
1 box white cake mix
1 3oz box vanilla pudding
4 large eggs
1 C milk
1/2 C melted unsalted butter
1 Tbsp vanilla extract
Instructions
1. Empty contents of boxed cake mix and vanilla pudding in a large mixing bowl and lightly whisk to combine and get rid of any large lumps.
2. In a separate bowl, combine all wet ingredients: eggs, milk, melted butter and vanilla extract. Lightly whisk them all together.
3. Pour wet ingredients into mixing bowl with dry ingredients and mix on medium speed to combine for 30 seconds. Turn off mixer, scrape sides of the bowl to catch any unmixed ingredients and mix again on medium for an additional 30 seconds to 1 minute.
Pour batter into greased cake pan(s) or into cupcake liners and bake in oven at 325 degrees Fahrenheit: 35-38 minutes for 1 cake, 28-30 minutes for 2 smaller cakes, or 22-25 minutes for 24 cupcakes.

3/4 C sour cream
1/2 C melted unsalted butter
1 Tbsp vanilla extract

1. Empty contents of boxed cake mix into a large mixing bowl and lightly whisk to combine.
2. In a separate bowl combine all wet ingredients: eggs, milk, sour cream, melted butter and vanilla extract. Lightly whisk them all together.
